This Recipe is a Keeper
Quick and Spicy Tomato Soup
3 tbl olive oil
2 carrots peeled and chopped
1 small onion, chopped
1 clove garlic, minced
1 (26-ounce) jar marinara sauce or 1 large can diced tomatoes and 1 med. can tomato sauce
2 (14-ounce) cans chicken broth (if you are making this on Friday use vegetable broth)
1 (15-ounce) can cannellini beans, drained and rinsed
1/2 tsp red pepper flakes
1/2 cup pastina pasta (or any small pasta)
1/2 tsp salt
1/2 tsp freshly ground black pepper
Warm the olive oil in a large pot over med-high heat. Add the carrots, onion, and garlic and suted until soft, about 2 minutes. (don’t brown the garlic) Add the marinara sauce or the tomatoes and the sauce, chicken broth, beans, pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls, top with freshly grated parmesan and serve. Makes 4-6 servings.

This sounds wonderful, just picked up some cannelloni beans today….I made a great Mediterannean Chicken crockpot for tonight…I’ll have to share with you my white bean and spinach soup too.

@thats_italian - Any soup recipe is welcome. I am definitely a soup person. On Tuesday I need something that I can fix and forget because I am gone all afternoon. When I get home there is only time for something quick before I have to take Matthew to his class. By the time we are home for the evening I am already for bed not cooking.
Here’s my Mediterannean Chicken in a crockpot… (we love soups too) This is more hearty than soup, much like a light pasta gravy…very light. We are having this version tonight.
3 chicken breasts
can of chicken broth
can of black olives
one onion chopped
a cup or so of chopped bell pepper (not necessary)
a couple of cloves of garlic chopped
a regular can of diced tomatoes (I used unsalted, had a coupon)
lots of Italian seasoning
generous on the garlic powder granules
2 T. of olive oil
Let all of that simmer away…all day….and then shred chicken & put back in pot. Serve over pasta or egg noodles or whatever makes you happy…brown rice works too. Sprinkle with Parmesan or Romano cheese per bowl as desired. This serves all 6 of us.
You can also use the chicken and a couple of cans of mild rotel tomatoes and olives and 2 T. of olive oil. And that’s it. No onions no nothing extra…And boom. A great dish! Just simmer away!
Ann, the dish tonight would have been better with just basil and a bit of oregano, and maybe parsley, instead of the mixed Italian seasoning with all the other seasonings they combine. The Italian seasoning is a bit Ameri-can-y so to speak. ; )
Also, this is good with Italian style diced tomatoes, but no rotel of course with that.
@thats_italian -I just got up and there is your recipe. You’ll never guess what I got out of the freezer for tonight…..chicken. So I know what we are having. It’s Tuesday so this will be great since it can cook on it’s own without me and be ready when I get home after my holy hour. You are a gem. I think I will use my tomatoes that I can with the garlic, basil, and oregano. Thanks.

@thats_italian - We just got home from Mass and Matthew’s first comment was ” that great smell is coming from the crockpot!” It does smell heavenly. I can’t wait until supper.
Oh, the yummishness!!! It almost brings out the dormant shreds of Italian in me.
